I made these with all purpose gluten free flour and it came out amazing! This recipe is wonderful!

I've used ricotta instead of farmer's cheese...I make them every year and don't always have farmer's cheese

Use 1 cup of ricotta instead of the farmers cheese + milk.

I haven't tried it in this recipe, but in my experience, cottage cheese has too high of a water content or something, and even drained, doesn't work for these kinds of things.

even if I reduced the amount of milk?

Blend the cottage cheese. Use a cup of it. Skip the milk. Should be ok even if I prefer the other type of cheese.

Thanks. Now that I'm looking back at the recipe I don't see any need to make the batter ahead, when I wrote that post I had a 1-year-old and I guess I wanted to prep during naptime . I will try them next week!

Made it again this year, like every year. My son asked me if I could make this only, and not the pareve doughnuts I also make (that look much more professional). These are so easy. At this point, I just use ricotta for the farmer's cheese if that helps anyone.
