Hi! I’m looking for a savory chicken bottom recipe. I usually make breaded or with duck sauce. So now I’m looking for something new. Thanks!

Chop onions and garlic and sliced mushrooms either tinned or fresh. Put all over chicken. Cover with tomato paste and oregano. Add some water so it doesnt dry out bake

Italian dressing, with or without bread crumbs.

Don’t know if this counts as savory, but it’s not sweet: dry red wine with sautéed onions, garlic & mushrooms, in a pot or in the oven. Basil is an optional addition.

Good with fresh lemon juice, fresh herbs, crushed garlic and white wine

Can use the Trader Joe’s coffee rub

Lots of peeled garlic, paprika, salt, pepper and a little wine or coconut aminos or chicken broth

Tomato sauce, turmeric, green olives, garlic,cumin and cayenne pepper

Trader Joe’s chili lime spice mix,
Lime juice, tequila

Can bake chicken with salsa of your choice

Can use Dijon mustard, a little honey and soy sauce and garlic and onions

My favorite: the by cookbook garlic chicken (slightly adapted).

Chicken legs
Sprinkle with garlic powder, onion powder, salt, pepper, paprika and a bit of hot paprika or smidgen of cayenne pepper. Drizzle olive oil. Place a peeled clove of garlic beneath skin of each piece of chicken. Bake covered at 325 for two hours and fifteen minutes, and then uncovered for 45 minutes.
Can add sliced onions to the pan.

Make a spice rub out of olive oil, salt, pepper, paprika and parsley. Shmear all over the chicken. Slice of the top of two garlic heads and sprinkle with a drop of olive oil, sugar salt and pepper. Place the garlic heads amongst the chicken and cook covered for 1 hr. Then 30 min uncovered..
The garlic pops out easily after and is delicious on the chicken.

You can smear bottled pesto sauce and bake

Place the chicken on top of sliced onions. Add whatever spices you have that blend well together. Bake at 350 for an hour.
Stick a toothpick into the thickest part, if the juices run clear, then it's cooked.

Breaded is good too. Mix savory spices that compliment each other into the breadcrumbs. Egg and bread it. I like to put the breaded chicken on sautéed onions. Bake uncovered for an hour. Check for clear juices.

My all time favorite is easy Coq au vin, from Jamie Gellers book.
White mushrooms and chunks of onion on the bottom of the roaster, arrange chicken on top. Pour a cup of red wine (dry) over the chicken. Sprinkle with black pepper, thyme and parsley. Melt some margarine ( I use earth balance) and pour on top. Cook covered for an hour and then 30 minutes uncovered.

Honey chicken from Jamie Geller
1/4 C olive oil
3/4 C honey
1/4 C soy sauce
1 tsp pepper
1 Tbs garlic
Bake face down

Not so savory, but my kids love
Sticky Chicken
1/2 C Duck Sauce
1/2 C Honey
1/2 C Ketchup
Mix, pour half on chicken quarters face down
Bake at 350 for 2 hours
Flip over, pour on rest of sauce and sesame seeds
Bake 10 minutes
Can cook for shorter, but won't be as soft

Slice 3 onions
Mix with 1/4 c olive oil and 1 Tbs onion soup mix
Put 1/4 mixture on bottom of pan
add chicken on top
season with 2 Tbs onion soup mix, paprika and pepper
scatter rest of onion mixture
bake at 375 for an hour

Do you bake it uncovered or covered?
