Does anyone have the recipe for the fluffy banana cake from the original Spice and Spirit cookbook. It's my DH's favourite cake and since we moved I can't find the recipe book. I've tried many other recipes but they just aren't the same. Thank you!

I just made this now - it's in the oven. It seems to have risen much more than I thought and is dripping all over the place... but it sure looks like it's gonna be fluffy!!!

In the end the bananas were TOO ripe and went a bit black and green when cooked and tasted fizzy. The actual cake was delicious though - and so moist - with a yummy toffee-like taste. We just had to pick the banana pieces out

I know this is a really old thread but do you really not mash the bananas?

As long as the bananas are very ripe and you're using an electric mixer you definitely do not have to mash them. The machine does it. I usually use bananas that I froze and when I defrost them, they are super mushy.
