ISO fluffy banana cake from yellow Spice & Spirit

Does anyone have the recipe for the fluffy banana cake from the original Spice and Spirit cookbook. It's my DH's favourite cake and since we moved I can't find the recipe book. I've tried many other recipes but they just aren't the same. Thank you!

YOU ARE IN LUCK B/C I JUST GOT THE RECIPE FROM MY MIL (it happens to be my DH's fav too)

3 eggs
2 cups sugar
1 cup oil
2 1/2 teaspoons baking soda
2 1/2 teaspoons hot water (mix with baking soda and add to eggs)
1 ts vanilla
2-3 bananas- sliced
1 cup water
2 1/2 cups flour

beat eggs and sugar. Add oil. Mix. Add baking soda and hot water mixture. Cut up bananas and mix. Add remaining ingrediants. Bake 1 hr at 350

ENJOY (BEST BANANA CAKE RECIPE EVER!!!!)

I just made this now - it's in the oven. It seems to have risen much more than I thought and is dripping all over the place... but it sure looks like it's gonna be fluffy!!!

It does rise a bit but always fits in a 9 x 13. Hope it's yummy!!

In the end the bananas were TOO ripe and went a bit black and green when cooked and tasted fizzy. The actual cake was delicious though - and so moist - with a yummy toffee-like taste. We just had to pick the banana pieces out embarrassed

As long as the bananas are very ripe and you're using an electric mixer you definitely do not have to mash them. The machine does it. I usually use bananas that I froze and when I defrost them, they are super mushy.
