These are delicious, light and fluffy. And healthy!
2 cups oat flour (you can make this by simply grinding up oats in the blender until they’re powder)
1/2 cup mini chocolate chips
1 teaspoon baking soda
2 teaspoons baking powder
1 1/4 teaspoons cinnamon
Pinch ground ginger (optional)
1/2 teaspoon salt
2/3 cup maple syrup (or honey or agave)
2 large eggs, room temperature
1/3 cup coconut oil, olive oil, OR unsalted butter, melted
1 cup unsweetened applesauce
1/2 cup unsweetened almond milk
Instructions:
Preheat oven to 350 degrees (F).
Line a muffin tin with paper or foil liners; set aside.
In a large bowl combine the wet ingredients. In a separate bowl, combine dry ingredients. Gradually add the dry mixture into the wet mixture, stirring until combined. The batter will be quite thin - not to worry!
Add chocolate chips.
Fill muffin pans.
Bake for 15-20 minutes, until toothpick comes out mostly dry. Remove pan from oven and allow the muffins to cool completely in the muffin tin. Serve at once or store in an airtight container for up to 3 days. We love to freeze these, too. They'll last in a freezer bag stored in your freezer for 1 month.

If you want it to be low calorie like TAP then you'll have to figure out how to omit the fat and Iiquid sweetener with zero calorie sweetener and still get the right texture.

I use my pancake batter recipe but bake in mini muffin pans.
Since we usually fry in oil, the pancake batter has no oil in it. I did add about 1-2 tbs to the batter when I made it in to muffins.
Since we usually sprinkle pancakes with sugar or syrup it has very little sugar in it. I added more sugar and a little brown sugar when I baked muffins.
My pancake batter recipe only has 1 egg... for muffins I used 2.
For a treat, you can stick some chocolate chips in each muffin.
I think that you can use the pancake batter recipe without adding anything and it will come out fine, just not so sweet.
If you don't have a pancake batter recipe, I can give you mine.

These are yum! We eat one for breakfast every day and keeps full for 2 hours, which isn't bad for around 150 cal. I make with half whole wheat flour, half white and replace chocolate chips with a handful of blueberries.
