I am looking for Pesach cake or cookie recipes that don't contain eggs or nuts and are gluten free. Potato starch and tapioca starch are fine. Anyone have some tried and true recipes?

I once used (and can't find it again!) a brownie recipe that transformed the tapioca starch into a gel - like substance as an egg replacement. It wasn't complicated and really tasted yummy. It was definitely online, so maybe there are other recipes that use that technique?

Chocolate avocado mousse
Key lime avocado mousse

I usually make these 2 in pies, but the crust has walnuts.

The ingredients are
Avocado
Sweetner-Original recipe called for soaked dates and agave
Cocoa Powder-or- lime and lemon juice

Nut-Free - Raw vegan deserts are usually Pesach friendly

Oops just saw that you want cake and cookies.

I can't remember the exact recipe but here's the video
https://m.youtube.com/watch?v=IsP3E73bAJw

I borrowed her book from the library and copied some recipes I liked.

For key lime- I made it up myself, just sub lime juice for cocoa powder

Thanks for all the suggestions.
Yes, coconut is okay, (as long as I can verify that it's not packaged with other nuts).
I googled for idea of tapioca starch replacing eggs so I'm going to try and experiment with that..

Elanas pantry has a lot of recipes using coconut flour.
I think her macaroons are egg- free
You can use only coconut for the above posted pie.
