Vegan dinner ideas

Hi! Can I get good vegan (no chicken, meat, dairy, fish, or eggs) recipes for supper? Mainly side dishes and soups are what I'm looking for. Hubby went vegan (besides for Shabbos) for health reasons. TIA! P.S. I'm not looking for advice on why or why a vegan diet is or isn't the ideal way to go. We've gotten help for that already Smile

Dinner tonight was :
One and a half ripe avocados, mashed, salt and dulse powder added
One whole red pepper, sliced. Used it as a spoon to eat the avocado.
Handful of nuts.
Desert was 2 medjool dates.

Please indicate whether he's doing raw vegan or both raw and cooked.

Sweet potato, cut lengthwise, bake face down.

My kids love this vegan dinner:

Soak beans overnight. I do a combo of great northern, navy, and some kidney, but feel free to customize to your preference).

Rinse well. Place in pot with water to cover. Add a sweet potato or two. I sometimes add a batata as well. Add salt to taste. Cook on low flame all day long.

Sometimes I soak the beans 7am to 7pm and put it up to cook at 7 pm, and let it cook all night.

My dd vegan, 80% of the time raw.
She make tacos
Whole romaine lettuce leaves
Ground mushroom with braggs amino acids
Diced peppers
Diced tomatoes
Diced red onion
Shredded carrot
Guacamole
Add whatever veggies you want
She serves this with diced sweet potato cilantro lime juice, sometimes she’ll mix a little bit of black beans with the sweet Potato

I’ve substituted mushrooms for ground beef in a lot of recipes

A favorite vegan dinner of mine is grilled portable mushroom with mashed cauliflower

I also like vegan sushi made with grated cauliflower instead of rice.

Avocado rolls (sushi), edamame, and cabbage or seaweed salad.

Falafel.

Mexican: Black bean soup topped with fresh cilantro, onions, and tomatoes, guacamole, and tortillas or bread.

Chinese stir-fry.
