Someone I know just had a baby and I offered to make her a meal.
Then she reminded me she can't have any wheat (including matza meal) products.
I don't want to make a typical chicken dinner - I got that a lot after I had my baby.
Any yummy (but not too difficult) ideas?

How about a fish meal? You can serve it with potatoes or rice and a vegetable. You could make a stir-fry with chicken cutlets and serve over rice, or you could make pepper steak with rice.

try the corn or rice pasta as a side dish. Or make lasanga with corn & rice lasagna noodles.

or make a meat loaf. meat balls over mash potatoes, and a big salad.
