if I understand ur question correfctly, I have a friend who wud fry chicken with no oil, just hte fat from the skin wud b enough, sprinkle salt n pepper on top

put clean chicken - no skin - in pan ... sprikle garlic, black pepper, paprika ... slice up onions, garlic, celery & carrots (potatoes) ... and cook - I add a drip of water and always check that bottom of pan does not burn - best is to let natural juices thicken and add a bit water at that point - then you have a nice sauce

I just made this last night!

Sautee onion in oil. Add some garlic and brown your chicken.

I had some leftover white wine so I added gthat, then added some pepper and Italian seasonings on top.

Let cook until done ..........

Every scrap was finished !!!!
