Royal Icing?

Does anyone have a good royal icing recipe? The ones I found online call for cream of tartar and I don't know which stores sell them. TIA

cream of tartar is a powder. you can find it in any supermaket-either in the baking isle or by the spices.

from balabustes choice

1 egg white

1 cup confectioners sugar
2 Tbsp hot water

2 drops of desired food coloring/optional

Beat egg whites on high until stiff. Add remaining ingredients and mix until smooth.

I think you have to be careful with cream of tartar being milky ...

No, despite its name, cream of tartar is NOT milky! Like mentioned above, it's a powder, and is usually found with the spices.

wilton makes a product called meringue powder. It is a egg white substitute (with other things added) which had a recipe for royal icing inside the container. I've made iot and it comes out very good. add more liquid if too thick. Royal icing hardens very hard. It is not for icing cakes, but good for cookies or hard roses on top of cakes too.

Are cream of tartar and meringue powder interchangeable? It sounds like they both do the same job.

I got an imitation cream of tartar at the peppermill. I picked up the royal icing recipe there as well. I just finished decorating my cookies, they came out gorgeous! thanks eveyone for your help.

cream of tartar is a wine derivative, and although many companies manage to get a hechsher, there are rabbanim who hold that it's problematic.

wilton's meringue powder contains cream of tartar as well.

what's imitation cream of tartar made of?

I don't remember the hechsher of the imitation cream of tartar, but I know that it is a good hecsher. here is the recipe.

3 egg whites
1/2 t. cream of tartar.
1 lb. confectioners sugar.

beat egg whites and cream of tartar until soft peaks form. add confection sugar and beat at high speed untill very glossy and stiff peaks form when the beater is lifted. this should take about 5-7 minutes. for stiffer icing add more confection. keep bowl covered with damp towel to prevent crusting and drying out. Keep the tip covered when not in use.
