ISO recommendations for 2 or 3 color vegetable kugel

I make this every pesach. guests always love it, and so does my husband. BTW, if you layer them carefully-you can just put all the layers in at once and bake for about an hour.

Vegetable Kugel, Tricolor (P, KLP, TNT)
Source: "Mavens in the Kitchen," Vaad HaKashrus of Tidewater
Serves: 12 or more (2 loaves)

1 (12 oz.) package frozen cauliflower
1 (12 oz.) package frozen broccoli
1 (12 oz.) package frozen carrots
9 eggs (the original poster said that she used 6, so I did as well)
4-1/2 tablespoons onion soup mix
1-1/2 cups mayonnaise

Cook the cauliflower (I used microwave). Mash. Mix with one third of the eggs, mayonnaise, and soup mix powder.

Pour half into the bottom of each loaf pan (I lined with parchment paper) and bake for 20 minutes in a 350°F oven.

Follow the same directions for the carrots, pouring over the cauliflower and baking for an additional 20 minutes.

Do the same with the broccoli.

Remove from pan once cooled and slice into beautiful, tri-colored slices. Freezes well, too.
