From Kosher by Design:

6T. margarine
1/2 cup flour
2 large onions, chopped
1/2 cup mayonaise
1/2 tsp salt
28 oz chicken soup (or hot water with parve chicken soup mix added)
9-10 large potatoes, peeled and sliced thinly
fresh black pepper
paprika

Preheat oven to 350 degrees. Spray a 9x13 pan with non stick cooking spray.

In a large pot, melt margarine over medium heat. add flour, stirring constantly. Add the onions, mayo, salt, and chicken soup.

Stir until smooth. Cook until sauce thickens.

With a ladle. place layer of the sauce into the bottom of prepared pan. Spread layer of overlapping potatoes. top with layer of sauce, Repeat, alternating with the layers of potatoes and sauce. there should be a total of three sauce layers and 2 potatoe layers with sauce on top.

Sprinkle the top layer with pepper and paprika. Bake uncovered until golden brown for about 1 1/2 hours.

I find this makes alot, so if its not for about 10 people you may want to cut recipe in half. Its delicious but very rich.

Quick'n'Easy "scallopped" potaotes:

In a large deep pan/dutch oven/wok heat oil
Add thinly sliced onion and let it begin to brown
Add 1/8-1/4" thick potato slices
s+p to taste
continue "turning" the potatoes and onions until potatoes are soft (takes any where from 25-45 minutes.

It's the kind of thing I make while doing a bunch of other things b/c you don't have to stand over it - just when you walk by give it a little mixing!

My family loves this!
