Dream Cheesecake

DREAM CHEESECAKE


INGREDIENTS:
15 graham crackers, crushed
2 tablespoons butter, melted

4 (8 ounce) packages cream
cheese
1 1/2 cups white sugar
3/4 cup milk
4 eggs
1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour

DIRECTIONS:
1. Preheat oven to 350 degrees. Grease a 9 inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

I dont know if any of you ppl get the peppermill newsletter- but when you get it check it out- there is a white chocolate lemon cheesecake that sonds like it dropped from heaven- if any of you want it I will post it

White choc lemon cheese cake------
CRUST:
12 whole graham crackers
1 t grated lemon zest
3 T sugar
6 T butter melted

CHEESECAKE:
5 ounces callebaut white choc chopped
1 1/2 lb cream cheese
1 C sugar
1 T lemon juice
1 T vanilla extract
5 eggs
1/2 C sour cream
1 C heavy cream

TOPPING:
1 C ready made lemon cream
3 ounces callebaut white choc chopped



preheat to 350. butter a 9" springform pan. wrap outside of pan with heavy duty silver foil. crush crackers really well. combine with zest, sugar and butter. press into pan and refrigerate.
melt choc in double boiler. beat cream cheese and sugar till creamy. add lemon, vanilla and mix it. ad egss one at a time. add melted choc, sour cream and heavy cream.
pour ontocrust.
place in roasting pan and pour hot water around it till about an inch.
bake for 60 min till top is set except center. let cool and refrigerate overnight.
melt white choc. add to lemon cream and spread on cheesecake.

justed to let all you lovely ladies know that I made the peppermill cheesecake that I posted above and it is SOOOOOOOO worth it... besides for being heaven it looks stunning...
