Someone posted a recipe for chicken rolled up with spinnach and I cant find it!!! anyone know where it is!

I take chicken cutlets and flatten them. I cook and drain frozen chopped spinach, drain really well. Then I mix the spinach with egg, sauteed onions, spices to taste and some matza meal. (amounts all depends on how much you are making.) I put a T of spinach mixture at end of flattened cutlet and roll up. Then I gently dip the rolled cutlet in a Chinese sauce, ie: a Chinese marinade. then I roll in seasoned bread crumbs.
Place on a greased baking sheet. I bake it for about 30 mins. Cut into one of them to make sure its cooked thru.
I thought about trying this with a rice/spinach filling, but havent had a chance to try it yet. It would also be good with sauteed mushrooms in the spinach mixture,I would imagine.

Since its dipped in Chinese marinade, that gives it a moistness, so I dont think it does. Enjoy.
