Fragrant Tabbouleh

(from AlphaBet Soup: Jewish Family Cooking from A to Z)

2 tsp. powdered parve "chicken" bouillon
2 cups water
1 cup bulghur wheat
1/2 cup zuccini, sliced
1/2 cup carrots, julienned
1/4 cup raisins, plumped
1/4 cup scallions, sliced
1/4 cup almonds, slivered
1/4 cup red peppers, diced

Dressing:

3 Tbsps. olive oil
2 Tbsps. vinegar
1 Tbsps. sugar
1 tsp. cinnamon
1/4 tsp. fresh ginger, minced
1/4 tsp. mustard
1 clove garlic, minced

1. Dissolve bouillon in hot water. Add bulghur wheat and soak 1 1/2 hours.

2. Mix in all vegetables.

3. Whisk together dressing ingredients. Pour some of the dressing over the salad. Before serving, add salt and pepper, and adjust other seasonings to taste.

Makes 6 to 8 servings.

May be made a day ahead. Do not add almonds or dressing until ready to serve.

Ooo, I have a few ideas on how to tweak mine, thanks tamiri! I can't do anything drastic or dh will boycott, but I can sneak in some of your ingredients gradually, hehe.
