I'm looking for an easy and different rice recipe. I'm thinking maybe something with sauteed onions and just some interesting spices. I'm trying to learn how to use spices more. Enough of the garlic powder, onion powder, oregano, basil, dill and paprika. I'm also not looking for something artificial. (ie no soup mix)

sautted onions, currants (or raisins) and cinnamon

saffron

mushrooms and onions sauteed

peas and carrtos with a little dill

sauteed peppers and onions then cook the rice in 1/2 and 1/2 water and tomato sauce or all tomato juice. Season with parsley, paprika and cumin (I call this my Mexican Rice)

This is what I do:
Saute onions and a couple garlic cloves in oil in a sauce pan, add soy sauce and pepper, maybe some salt.
Cook rice, once done add the onion garlic mixture to rice. Mix and ready to serve.

Do they use sofrito in Argentina?

In case not, this is what I put in my yellow rice:

In a blender I mix:
One onion
one head of garlic
one green pepper
one handful/bunch of cilantro
a dash of water to help it blend

That makes a big batch so I freeze some of it into small baggies of about half - one cup portions.

When I boil the rice I throw in a lump of sofrito from the freezer, then later I put enough tumeric to turn the rice from green to yellowy-orange. a bit of salt & yum!

- toast cumine seeds (whole, not ground) for a minute or so, add oil and sautee chopped onions.

- safran (best if you dissolve in water, let the rice soak a bit), goes great either with sauteed onions
and/or raisins with sliced almonds

- toasted pine nuts sprinkled on the top AFTEr the rice is cooked.

- put 1 large carrot in food processor with 1/2 water, process till it looks like orange-coloured water.
Use this to cook the rice. This will have lovely orange colour and a good non-threatening way
to include vegetable in your diet.

- sauteed mushrooms with allspice
