I am making my challah tonight (Tuesday) - do I have to freeze and defrost on friday, or will they be okay leaving them out for shabbos? Thanks

Wrap in a heavy plastic bag and most definitely do put in the freezer!

I also wrap it in a plastic bag (make sure that it's sealed well so that it doesn't get a freezer taste) and then on Friday, I put it into the oven for a few minutes. That will make it crispy... If you like it verrry crispy and warm you can also put it on the hotplate and take it off right before serving.
I also have to warn that the crispier it gets the more crumbs for you to deal with...

I always bake on Tuesday and I always freeze (in freezer bags). They always taste fresh. I never put them in the oven because then they fall apart when you cut them.

depends on time of year. in summer you'd risk mold if you left it around in plastic at room temp. I always freeze even if I bake on wed. any time of year. it's always fine. just wrap tightly to keep out the air. recipes with honey stay fresher because they hold the moisture in.

Freeze in a bag and take it out Friday morning. Put it in the oven on a low temp for about an hr before the zman. YUM!

I made challah on MOnday, and froze them in challah bags. They come out delicious. DO not leave them out, they will get stale.
