I once had this delicious side dish of zuchinni in tomato sauce (sweet like) and would love to make it- no idea how.

I sautee a large onion in a pot, add zuchinni, canned plain tomato sauce and sugar or sweetner to taste, that's it. Could not be more delicious. Sometimes I add a couple red or green peppers and sautee with the onion. Cook until the zuchini is soft.

I make it often. You could also cut up some plum tomatoes along with tomato sauce, and/or add ketchup. You could slice in a carrot for sweetness as well, or red pepper.

This is how I make it. I saute onions then add a cut up tomatoe, a can tomatoe sauce, a can mushrooms, a little cut up eggplant, a few cut up zuccinis, and some salt sugar and black pepper. Cook on low flame for 25-30 minutes.

I found this recipe on Imamother a while back. It was posted by Henya. I've made it several times, and it's delicious.

Dice & saute: 3 cloves garlic
1 onion
When golden, add: 3 zucchinis (diced)
1/2 green pepper (diced)
let cook in pan till soft. turn off fire
Add: 1 small can tomato sauce
3 Tbsp. brown sugar
black pepper (add to your taste, as peppery as you like it)

Do you peel the squash or not?

You could probably either peel it or not, depending on your preference. I am sure it does not affect the recipe too much.
