Diet potato kugel

We've started a diet, and I'd like, a low fat or fat free, or cholestrol free potato kugel recipe, if there is such a thing.

the lubavitch pesach cookbook has recipes but mine is put away. Try making a regular recipe, maybe taking out some egg yolks and use spray oil in the baking pan, see how it comes out.

also use vegetables like squash and cougette instead of some or all of the potatoe.

squash works well but the best thing to do is after grating, salt it a bit and squeeze out the moisture, because it's very watery.

google found me this recipe on medicine.net. I'm not sure why so much oil is necessary though.

Lighter Potato Kugel
Ingredients:

1 large onion, grated
6 large potatoes, peeled and grated (about 1.75 pounds of potatoes before peeling)
2 eggs well beaten (higher omega-3 if available)
1/2 cup egg substitute
1/4 cup canola oil (this used to be schmaltz - rendered chicken fat!)
1/4 cup double strength or condensed chicken broth (low sodium chicken broth can be used)
Kosher salt and pepper to taste
Preparation:

Preheat oven to 400 degrees. Grate the onion first. Then grate the potatoes and add to the onion to stop the potatoes from turning brown. Further chop half of this mixture with the blade of the food processor. This makes the kugel less dense.
Mix everything together. Pour into a 2-3 quart rectangular casserole dish that has been coated with canola cooking spray. Bake for about an hour or until very brown and crusty. Cut in to squares to serve.
Yield:
8 servings

Nutritional Information:
Per serving: 187 calories, 5.5 g protein, 23 g carbohydrate, 8.3 g fat, .9 g saturated fat, 53 mg cholesterol, 2 g fiber, 91 mg sodium (not including salt to taste). Calories from fat: 39%

I second this. I made zucchini potato latkes past Channuka and don't think anybody could tell the difference. You can also add whites only for lower cholesterol. And I never add oil to my kugel, just use oil spray on baking pan.

Does anyone know the recipe for Chava Goldman's (if I remember her name correctly) diet potato kugel from her (Jewish) diet book ?

Fleetwood, otherwise, I'd suggest you stick to side dishes other than kugel. Kugel is full of oil and eggs and is really very fattening; you can go potato salad, pasta salad, or so many other side dishes for less calories and fat.

The Diet Center gave me this recipe:

1 potato
1 small squash
2 egg whites
salt, spices

This is an individual sized portion. Adjust it for as much as you want.
