I have tried to freeze brocolli kugel in the past and it came out tasting soggy.
Do you guys think if I freeze it before I bake it, it would be any better??
Are you allowed to since I just defrosted the brocolli and then I'm going to refreeze it? Question

I never had a problem but I served it hot after frozen.

I freeze it baked all the time, with no change in quality at all.
How did you defrost it?

I freeze broccoli kugel all the time and it tastes fresh after I put it in the oven again after thawing out. If you're not rebaking it again after freezing it, that's where you're going wrong.

I just take it out of the freezer before shabbos and put it on the plata with no problem. or shabbos da, on a muffin tin. as long as it's warm, you're fine.

Not necessarily, lots of food, even if it's put on a blech, has a wet graininess if it's not heated in the oven after being defrosted.

Hm. Maybe we're not that fussy.

Well, I am pretty sure I served it hot last time , but I can't remember.
Either way, I froze it, and we'll see how it is this time.
Thanks everyone!

I too freeze and then rewarm in the oven. It's usually not soggy.

I can't stand the way it tastes after it has been frozen, but I am very particular about how things taste.

If you freeze it, you should heat it in the oven uncovered to keep it from getting soggy.
