instead of a sandwich how about some pasta in a container, or jelly sanwich. You can use butter also, cream cheese and olives in my house is a hit.

maybe try:
egg slices with tomato (hard boiled or fried)
cheese and lettuce
lox and tomato/pickle
cream cheese and tomato
tuna with pickles/tomato/lettuce/cucumber
margarine and jelly I know, I know, its gross- but kids love it...
anyway, those are my favorite sandwiches except the last one of course.

My favorite sandwich in school was grilled cheese with chocolate chips.

What about veggie burgers on a bun or whole wheat bread? Or bagel and cream cheese? Also, tortillas and wraps are a nice, new presentation for the same old.

Cream cheese sandwiches; hummus in a little container with crackers or carrots for dipping; ditto veggie chopped liver; gefilte fish (one of my kids loved this a few years ago). If tree nuts are allowed, you can send in a little container of those, or soy nuts are a great protein for kids who don't want sandwhiches (and there's no problem in peanut/treenut-free schools bringing in soy nuts).
