I have a bunch of carrots that I want to make as a side dish for Shabbos. Don't want to pour a lot of sugar on them. Any ideas? I'd really like something more than "cut up carrots, add olive oil, salt, and pepper, bake.)
If nothing else, at least something with honey would be better (on the GI Index).

cook carrots; cut into slices. Toss with olive oil, minced garlic, chopped scallions or chives, parsley and/or dill, pepper, cumin and a dab of honey. Serve cold or hot.

I searched. There were a ton of carrot muffin and carrot kugel recipes. Some tzimmus recipes (not low carb). That's about it.
If you have any ideas, I'd be happy to hear...
