My meatballs (actually usually 'turkeyballs') always come out pretty tight, and I dont really like it. I've once tasted meatballs that were more softer/fluffier. Anyone know the tricks? more eggs? more water?

You can try seltzer instead of the water...

Trick is a soaked and squeezed out challah roll. Also maybe another egg.

Another vote for using Challah soaked in water and then squeezed out (instead of breadcrumbs). And I always add an egg.

I take the soaked and squeezed challah and the eggs and blend it with a hand blender, it makes it fluffy!
