EASY shabbos menu

OK, I am REALLY tired this week, to the point that it hurts to move (if ykwim). I need ideas for an EASY and quick Shabbos menu that will still be shabbostic. I will boil gefilte fish, cook my easy/quick chicken soup. Really I need suggestions for easy chicken, side dish and a couple of salads (our family likes to have salads). Maybe dessert?

When I am really tired I make as much as possible in the oven. It makes my life so much easier. I don't have to sit over the pots. Just set the timer. And there are no pots to wash.

some ideas:

oven crusted gefilte fish
oven farfel
herb roasted red bliss potatoes
one pan garlic roasted chicken, potatoes and veggies
crispy duck sauce chicken
one pan Italian chicken with zucchini and tomatoes

some easy salad ideas:
cole slaw
cucumber salad
easy garden salad w/bag of ready lettuce, pint of grape tomatoes, sliced red onion (just throw it 2gether)
balsamic vinaigrette salad (also no chopping involved and very simple dressing as well)

Thanks for responding, ra_mom! Can I have your recipes for the things I bolded?
Also, I dont have red potatoes, can I make the herb roasted potatoes with regular yellow/brown ones? If so, how do you make that?

Here you go SV. ABC, I am including the crispy duck sauce chicken recipe for you as well.

oven crusted gefilte fish from bhmom
• gefilte fish loaf
• olive oil
• paprika
• oregano
• salt
• pepper

Unwrap the gefilte fish under running water.
Smear gefilte fish loaf with olive oil.
Place in size appropriate loaf pan. [Use a size small (2 lb.) loaf pan for a 20 oz. gefilte fish loaf, so that it doesn't flatten out while baking.]
Season the top of the gefilte fish loaf generously with paprika, oregano, salt and pepper.
Bake, uncovered, at 350 for 1 hour and 30 minutes.

herb roasted red bliss potatoes
• 1.5 lbs. baby red bliss potatoes, halved
• 1/4 cup olive oil
• 1 Tbsp dried parsley flakes
• 1 Tbsp onion powder
• 1-1/2 Tbsp garlic powder
• 3/4 tsp oregano
• 3/4 tsp Kosher salt
• 1/2 tsp coarse black pepper

Place halved potatoes into a 9x13 pan.
In a cup, mix parsley, onion and garlic powders, oregano, salt, and pepper. Sprinkle over potatoes.
Drizzle with olive oil. Toss potatoes to coat.
Roast, uncovered, at 400’ for 1 hour until potatoes are soft inside and crisp and golden brown outside.
SV, you can use regular potatoes. Just slice then into 1" thick rounds.

crispy duck sauce chicken
4 chicken bottoms, legs and thighs separated OR 1 chicken, cut into 8 pieces
garlic powder
salt
1-1/4 cups duck sauce

Arrange chicken pieces in 9x13 pan. Sprinkle tops of chicken with garlic powder and salt.
Pour duck sauce on top.
Bake, uncovered, at 375, for 1 hour and 15 minutes.
If you're short on time and patience you do not have to cut the 4 pieces of chicken into eighths.

Make a one pot fish dish like ratatoulle with the fish roll, and a one pot chicken dish like chicken & poatoes. I have tons of recipes like that posted here.

When you feel better, you can treat them to salads.

Marinated corn salad us easy
2 cans corn
1 red pepper chopped; fine
1/4 of an onion chopped; fine
1/2 c of each sugar vinegar and oil
Dash of salt

Oh and I make this salad with
2 cans mushrooms
1 red pepper cut in to thin strips
3 scallions chopped
Same dressing

It tastes like a salad my patents used to buy for shabbos when I was a kid

I boil geilte fish, bake chicken with duck sauce, potatoes and onions, salad with creamy garlic dressing.
