VEGETABLE HAMENTASCHEN

DOUGH:
3 cups flour
1 egg
1 tsp vinegar
1/2 cup oil
1/2 tsp salt
1 cup hot water

combine ingredients for dough, kneading until smooth. Refrigerate for one hour,

cabbage filling:
1 lb. shredded cabbage
3/4 tsp salt
1/8 tsp pepper
3 Tbsp oil for sauteing
1 tsp sugar
1 tbsp. flour

saute cabbage in oil. add the rest of the cabbage-filling ingredients.

Preheat oven to 350.
divide dough into three parts. working with one part of dough on a well floured surface, roll out to 1/4" thickness. Using a 2.5" diameter cut out 12-15 circles. place a teaspoon of desired filling in the center of each circle. fold cirlces to form hamentaschen,

I guess the dough recipe provided should give you enough for all three fillings listed in the binah, if you want to do just one or two fillings maybe cut the recipe in half or thirds.


P.S. binah has only sweet potato filling, broccoli filling and cabbage filling.

Can anyone please post the other 2 fillings, I dont get the Binah magazine. Theyt sound delicious!! TIA

I just made them last night. They came out crunchier then I expected. The dough is like real humantashen dough. They are pretty tasty though.


Broccoli Filling:

1 lb cooked and mashed broccoli
1 tbsp mayonaise
1 egg
1 tbsp onion soup mix flavor
1 1/2 tbsp flour

Sweet Potato- same except with 2 medium sweet potatoes cooked and mashed.

I made the cabbage and the sweet potato, sprinkled them with sesame seeds. They came out amazing!! I rolled the dough out very thin.
