I defrost it and serve it hot but it tastes mushy and unapppealing. Does anyone have success with this?

hmmm never had a problem with this. Do you use a meatloaf pan when you cook it? It's a nifty pan that looks like two bread pans that stack except the inside one has holes in the bottom so as the meatloaf cooks the fat drains out the bottom... You could probably rig something up using a disposable pan and just poking holes in the bottom of it...

I would put it straight in the oven without defrosting it.
