Would you use oil that's been used last year and sitting in a cabinet all year?

I wouldn't use it. I can't imagine it's not at least somewhat rancid after staying open for a year.

I once went to to a vacation place where they used the oil that stayed over from the previous summer. The taste was bad, we couldn't really swallow the food.

FTR, I would NOT use cottonseed oil at all. Cotton is not a food. It is treated with different pesticides than foods are. I wouldn't want to ingest it. Stick with light olive oil or safflower oil and you'll be better off all together.

What about closed olive oil? I have one that I didn't use last year and saved.

oils can easily go rancid. any oil you dont use often, keep in frig. last years oil from pesah, either use up after pesah, or throw out. and make a not in your pesah notebook (!) of how much oil you ctually used, for next years shopping trip.

1. We don't use cottonseed oil at all, b/c of kitnios.

2. Oil opened a year? No good.

3. Olive oil doesn't last for more than around 6 months, even unopened (check the sell by date). You can use it for lighting.

I actually checked the best before date today, and it says feb 2011, so I assume it's ok. I have an open one as well, but will not use that one.

I would just keep the opened oil after pesach for reg use and buy a new oil every year on pesach.

That's what we do, but it's not so simple. You HAVE to use that oil on Pesach but you don't have to use it for during the year. Itr's costly so you don't want to waste it. Yet, it's unhealthy and poor quality ....
