Not sure if anyone will be interested in this, but I just made really good Patties. I experiment a lot when making patties, and this one came out pretty tasty!
note: everything is approximate, sorry...
4 medium potatoes
3 stalks celery
2 medium onions
6 medium carrots
1/2 bag frozen mixed veggies
Boil together in pot with not too much water, till soft. Spill out extra water, blend veggies- I used an immersion blender. Add:
10 oz canned salmon
5 oz tuna (These fish amounts for sure can be adjusted to how you like it)
2-3 T mayo
2-3 tsp mustard (I used jalepeno)
Spice how you like it (I used, pepper, chile powder, onion and garlic powder)
2 eggs
Bread crumbs (I would say about 3/4- 1 cup, but until you get a consistency that will be easy to work with)
Mix well.
I fried my patties with pam, big heaping tablespoon size dollop then slightly flattened, on medium flame- 3 minutes on 1st side, 1 1/2 minutes on second. Next time though, I may try to bake in the over, because I really dislike frying! Otherwise, I may try as a loaf, which I have done before when very lazy...
DH made a dip for it, which I don't think it really needed- but it tasted good with it anyway.
