Also 2 of my favourites.
Baked nectarines
Halve and remove stone from nectarines. Place skin side down (ie cut side up) in a pyrex dish. Add a small ball of marzipan in where the pit was. (Or just sprinkle sugar and sliced almonds). Pour over 1-2 table spoonful liquor (amaretto or dessert wine goes beautifully) and bake in a fast oven for about 15-20min or so till the marzipan turns golden. Good for using under-ripe or over-ripe nectarines. Can be served hot or cold.
Baked figs
Halve fresh figs. No need to remove skin but cut the top hard bits. Place cut side down on a greased pyrex dish. Alternatively, lay a sheet of frozen puff pastry dough and place figs on top. Drizzle a bit of honey (and a crumbled sprig of rosemary and/or chopped walnuts as an option). Bake in a fast (ie like 185C) oven for 15min or so. Best served while still warm.
