I never tried baked I only do it unbaked, it still tastes fresh unbaked.

I'm assuming you already fried the eggplant? If so, and you're only talking about whether or not to bake it so the cheese melts, I don't think it's going to make much of a difference either way.

I wasnt sure if the cheese hardens, and yes I was referring to prepared eggplant meaning fried and layered up. thanks
