any ideas for a good shabbos ice cream dessert - but no rich's whip as my nutritionist says it is nothing less than POISON ..

Here's what I would do.
Mix rice crispies, sugar and a little margerine. You can also add coconut if you like. Spread on cookie sheet (not patted down, just loose) and bake until golden brown (not more than 10 mins usually).
Make ice cream from egg whites (whipped), sugar, vanilla, cocoa and (optional: coffee).
In a pan, put a layer of crunch, then pour ice cream over, then top with another layer of crunch. Freeze and serve.
Alternative. Freeze ice cream without crunch. Take out of freezer when frozen, scoop nice round balls, cover with crunch, and re-freeze until time to serve.

I do use rich's whip for desserts (but never raw eggs, I think that is worst). But not in the summer. There are so many fresh things to make now:
Fruit pies (blueberry, peach, nectarine, etc)
Fruit crumbles (Mix diff fruits, like peaches and blueberries) Make in indivudual ramekins for a great presentation.
Custard pies with fresh fruit on top (or canned)
Compote
Fruit Soup

I'd personally go w/ fresh fruit & melon in this kind of weather
all my other ideas (custard pies & apple crisp..) were already mentioned. kol hakavod for thinking abour Shabbos already!!

I have a good friend who makes ice cream from a coconut milk base, its delicious and much healthier than rich's. she has an ice cream attachment to her kitchen aid, so it makes it easy. maybe google a similar recipe?

Why not sorbet. Its still frozen and is healthier than ice cream.
There is also a recipe I've seen with marshmallow fluff and coffee and I'm not sure what else. You can try and google it.

Egg whites are perfectly fine as long as you get those that are pasteurized.
