Salad recipe's without mayo, vinegar and lemon juice

I don't want to get into arguments here but we are careful with what we eat on rosh hashanah - nothing bitter/sour. If you are wondering about mayo - because it has vinegar....
Any ideas for salads without mayo, vinegar, lemon, ketchup.....
It's so hard to make good salads without these ingredients.
Any ideas would be great!

Can you have spices? You can put a little oil, mustard and then salt, pepper, garlic, basil, oregano, parsley.

Carrot salad with orange or pineapple juice.

Celery and apple salad with orange juice.

BTW, check with your rav - at one point we didn't use mayo either and we asked and were told if you can't taste the sourness there's no problem. So ask your own LOR. Ditto anything with lemon juice that doesn't have a sour taste (eg a cake).

Also we were told you can use almonds because they are not called egoz.

It's not too exciting, but it tastes good - just grate apples or chop finely and mix with small pieces of celery. If you use almonds and/or raisins you can add those too. Actually I just thought you could use chopped dates. Pour on orange juice.
