Zucchini muffin recipe please

I call this recipe zucchini bread and I make it in a loaf pan, but I'm sure you can make it as muffins, and it's really delicious.

2 cups flour (I use 100% whole wheat and you can't really tell the difference)
1 Tbsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3 eggs
2 cups sugar (I've used less and it still comes out great)
1 cup oil
1 tsp. vanilla
2 peeled and grated zucchini

Mix and bake @ 350 (I don't know how long, I just keep an eye on it).

This is a very healthy kugel, a nice change from sweet zucchini kugel, and is great for vegetable lovers. The friend who I got this from said it is only 1 weight watchers point for the whole kugel. My kids also go crazy for this.

This is my favorite...

2 cups flour
2 cups sugar
1 cup oil
3 eggs
1 teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
2 teaspoon cinnamon
3 teaspoons vanilla
2 cups grated zucchini

Preheat oven to 350 degrees.
Mix all ingredients together besides zucchini.
Add zucchini.
Pour batter into muffin tins.
Bake 25 minutes.

ENJOY!

bumping this up because I just made this recipe...

I cut the sugar to 1.5 cups and used 1/2 cup oil and 1/2 cup applesauce. I also added in a cup of chopped walnuts and used 3 small-medium zucchinis. I baked them in muffin tins for 27-30 minutes. it made 24 smallish muffins (the disposable tin size) and came out delicious!

Can the zucchini be grated on large grater (is that what it's called?) or does it need to be very fine?

Sweet potato is a no-go in my house so please share the mushroom zucchini muffins recipe!

I made these in mini muffin pans today. made almost 6 dozen. I didnt use walnuts, but I added in 3/4 cup of mini chocolate chips and used 100% whole wheat flour.

I wanted to say that I tried subbing all of the oil with applesauce to mixed results. they came out delicious but I had to spray up my nonstick pans and some of them squashed when cooling because they were soft and mushy at first and didn't keep the shape well. once they cooled, they were totally fine.

the way I made it today, each mini muffin has approximately 45 calories, with 1 gram each of fat, protein, and fiber.

I made these and they were a big hit. Thank you. One thing though. The last time I made zucchini muffins they were so heavy and I didn't want to take that chance again, so I whipped the eggs first and it came out perfect. I made them as muffins.
