I subbed some of the sugar for brown sugar. It changes the flavor a bit.

Could I make this recipe by hand instead of using an electric handheld whisk or mixer?

I just tried this cake again. When I take it out of the oven it's a beautiful high cake and as it cools it drops by at least half. Is that the way it's meant to be? Am I doing something wrong?

Honey cakes fall. But half sounds extreme. Are you using one pan for the full batter? I find honey cakes work better divided into small loaf pans (2 for this recipe, 3 for standard cake size recipes).

Oy! I wonder if there's a difference in ovens, convection fans, humidity levels, altitudes?

I made this for my son's chalaka in school and the (5yo) boys all ate it!
Yesterday my older son came home from mechina telling me that they had a chalaka in his class and they brought my cake. He remembers and likes it too!
I'll be making it soon, thanks for the reminder. I'll try the brown sugar.

The first time I tried it we had a nice high cake and it was a real winner. I've tried it several times since and it always drops. Same method. Same oven.

It may well be the honey causing this. Some brands have watered down the honey and it is more runny. I know many people who have had their honey cakes drop shortly after coming out of the oven due to the above.

Interesting. Did your cake remain high?

I have not yet tried this particular recipe. But I know those who made the one from the Nitra Cook Book for years, with excellent results, had it flopping since the honey became runny.
