I made this Erev yk. Took 5 min to put together! btw I made it gluten free and was delicious!!!

According to the "no nuts after Succos?" thread, some people don't eat almonds through Succos.
Either way, does anyone have an idea how I would make this look fancy? I don't eat honey cake, so I don't know what tastes good with it. Mocha and vanilla glaze? Chocolate curls?
Glaze it in mocha with white chocolate piped flowers? Would that clash with honey cake?

I doubled it and baked it in 4 7" round disposable tins. It tastes yummy but rose funny - the cakes look like mountains instead of having even tops and the sides folded over. Should I not have doubled the leavening? Should I not have used the round tins?

Thank you!! You saved me this year from doing the more complicated recipie I usually do from KBD (short on time). This was great! No egg separating or melting bars of chocolate!!

They come out great in 2 lb loaf pans. (2 pans per recipe.)
In general, honey cake sometimes rises unevenly.

2 eggs
3/4 c. honey

1 c. strong coffee

Preheat oven to 350. Mix all ingredients together. Pour into greased 9x13. Bake until toothpick comes out clean.

1 cup strong coffee (1 c hot water w spoonful of coffee granules)
2 cups flour

Preheat oven to 350 degrees. With electric mixer, beat all ingredients together for 3 minutes. (I don't use the mixer. Batter will be runny.) Pour into 2 greased and floured loaf pans. Bake for 40 minutes. (may take a little longer or less) Test for doneness by sticking a toothpick into middle of cake. If it comes out dry it is done. ENJOY!!

I just made it today and already had like 5 slices!! Someone stop me!

I found the other recipe too sweet for me. Not sure what else was different but this recipe just works perfectly so why change? Smile Unless you want a healthy version ...

Thanks. Yours has less oil, so thats a plus! You think I can replace even that much oil w apple sauce, like I often do when making chocolate cakes?
