Christianity is the force that had the most direct impact on civilization. But there would be no Christianity without Judaism. Hence, I think the term is just a way to pay respect to the Jewish origins of Christianity. The term "Judeo-Christian" to me simply refers to the basic system of laws, essentially, the 10 commandments, and attributes such as mercy and charity and responsibility. It doesn't offend me. But we Jews obviously don't use it because we don't need it! We don't have to pay homage to Christianity.
