we recently ate out at someones house and she served DELICIOUS mushroom kugel.
I googled mushroom kugel and all the ones that come up are have noodles and potatos. this had neither, it was in a flaky pie crust.
I think it may come from KBD Entertains? can anyone help me?

Yeeeees, except she said it was a "kugel" in a PIE CRUST so I assume she meant mushroom quiche.

Any thoughts???????????

hmm. bumping this up. is there such a thing as a mushroom kugel that is NOT a quiche? something that is firm enough to be cut into squares but not primarily eggs? we love mushrooms but since puff pastry and pie crusts are so terrible for the figure, I'm trying to use them in other ways. if no answers come up, I may just try making up a mushroom kugel recipe myself...

this recipe won the kugel contest on the joy of kosher with jamie geller website, so it should be pretty good:

Layered Mushroom Kugel
I came up with this recipe to satisfy my love of mushrooms and as a dish that fills my gluten-free needs. I've made this pareve but to make it more decadent use dairy ingredients.
Times
Prep time: 25 mins
Cook time: 20 mins
Ready time: 45 min
Servings
8
Ingredients
10 - 12 oz. mushrooms, chopped, crimini, shitake and portabello about 4 cups chopped
1 cup onion, chopped
1 tablespoon olive oil
1 tablespoon margarine
2 cloves garlic chopped
2 tablespoons white wine
1/2 teaspoon salt
2 cups yellow cornmeal
3/4 teaspoon salt
1/2 teaspoon baking powder
1 cup soy milk
1 cup sour cream substitute
2 eggs, beaten
3 tablespoons margarine, melted
Directions
Preheat oven to 450 degrees. Grease 9 in round baking dish. Heat the oil and margarine in a large skillet. Saute the mushrooms, onions and garlic over medium heat about 20 minutes, until soft. Mix in the salt.
Add the wine and stir until absorbed.
While the mushrooms are cooking prepare the cornbread mixture.
In a bowl, mix together the cornmeal, salt and baking powder. Add the soy milk, sour cream substitute, eggs and margarine. Take 1/3 of the sauteed mushrooms and add to the cornbread mixture. Mix gently. It’s o.k. if there are lumps!
Spread half the cornbread mixture into prepared baking dish. Spread the mushroom mixture and then top with remaining cornbread mixture.
Bake about 20 minutes.

Zucchini Mushroom Mini Kugels

3 eggs
1 c oil
1/4 c sugar
1 1/2 tsp salt, divided
1 tsp baking powder
4 medium-large zucchini (2 peeled, 2 unpeeled)
1 Spanish onion (I use 2 medium-sized yellow onions)
12 button mushrooms
1 clove garlic
Pepper to taste

Grease muffin tins very well.
Mix eggs, oil, sugar. Add 1/2 tsp salt, and baking powder. Mix well.
Grate zucchini finely. Add remaining salt, and pour into a colander set up over a bowl or sink to let the liquid drain.
Process onion, mushrooms, and garlic in food processor. Add to batter along with zucchini. Mix to combine, add pepper to taste.
Pour into prepared muffin tins. Bake at 350 for for 30 minutes.
Remove from tins by loosening around the edges with a sharp knife.

They're very good. I used small 4" round pastry tins instead of muffin tins, because I find that whenever I make kugel muffins they come out puny and too small to look nice on the plate. So I made 10 minis.
With the muffin tins, you'll get between 16 and 24 mini kugels.

It definitely is a lot. I wanted to follow the recipe exactly the first time I tried them so I put in the whole amount. It gives a souffle like texture.

here it is:

12 oz mushrooms
1 medium onion
2 eggs
1 t salt
1/2 c flour
1/2 c soy milk
1 T oil

slice or chop mushrooms. dice onion very small. mix all ingredients together and pour into greased 8x8 pan. bake at 350 for 50-60 minutes.

everyone gobbled this up! it was easy to cut into squares (except the very middle which was too gooey- so I increased the cooking time for y'all.)

next time, I think I'll double it and put it in a 9x13!

I've never cooked with mushrooms before.

I have a can of mushrooms that says dry wt 8oz and net wt 14oz

I want to make pobody's nerfect's recipe. How should I measure 12oz of mushrooms?
