ISO recipe chicken fingers marinated in pareve buttermilk

Hi, I really hope someone can help me Exclamation
about a year ago, one of the magazines (Binah? Mishpacha? Hamodia?) had a recipe for chicken fingers that were marinated in a pareve buttermilk made of milk substitute and vinegar, rolled in crumbs and then baked. I can't find the recipe ANYWHERE (someone probably saw a scrap torn out of a magazine and threw it out Crying )
Does anyone know the recipe or can someone help me re-create it? My kids LOVED it.

I have it!!!! I just made it last week and wasn't very impresesd! embarrassed but I will type it up for you!

1/2 cup soy milk (not sweet)
1/2 T vinegar
1 1/2 skinless bonless chicken cutlets
3 3/4 cornflakes or 1 1/3-1 1/2 cornflake crumbs
1 tsp parprika
1/2 tsp sugar (optional)
1/2 cup mustard
1/4 cup honey
1/2 tsp fresh ginger or 1/4tsp dry ginger

if u need the instrucions let me knwo and I will type them as well!

sure I can do that sorry only doing it now just took some time busy day!
it was in mishpacha family first magazine

mix the soy milk and vinegear and let sit for afew mintues (until curdels and takes on the texture of buttermilk) combine this with the chicken in a bag or bowl. marinate for 30 minutes. drain if necessary
preheat oven to 375
process the cornflakes in the food processor using metal blade until finley chopped
mix in the paprika, sugar, salt
combine the chicken cutlets with the seasoned cornflake crumbs coating well
spray a pan wiht baking spray or line iwth baking paper
bake the coated chicken for 15 min or until is done
combine the mustard honey and giner in a bowl and serve it with chicken pieces
