Make-Ahead Garlic - Great SCD Idea

5 heads garlic, cloves separated and peeled
2 Tbsp olive oil

Process garlic cloves from 5 heads of garlic in a food processor fitted with the S knife blade.
Drizzle in 2 Tbsp olive oil and continue processing until garlic is smooth.
Measure out crushed garlic in 1/2 tsp increments, arranging in ice cube trays or on a cookie sheet.
Freeze overnight.
Pop out garlic from tray (you may need to run hot water over the bottom of the ice cube tray for 1 second in order to get the garlic cubes all out in one shot.)
Place frozen garlic cubes into a baggie.
Keep in freezer, and use as needed.

Each 1/2 tsp of garlic is equal to 1 clove of garlic.

It's just a bit more mellow.
It tastes just like the store bought frozen garlic cubes, which are great, and a huge convenience, especially when you use as much garlic as I do.
No preservities though, and a lot cheaper.

Never bought the freezer ones, didn't seem worth the money. Can you use it uncooked things like salad or only cooked food?

I use it in salad dressings all the time, and on room temperature garlic spaghetti.

There's nothing like fresh garlic. I would never buy those jarred stuff and I didn't like the frozen cubes. It has almost no flavor.
