Does anyone have a good recipe for sugar or chanukah cookies that does not require margarine or am I asking for the impossible?
TIA

14 y/o DD "discovered" by chance that substituting oil for margarine works and it's very yum!
she just uses the oil (corn or canola ) instead of melted margarine on a regular recipe and voila! cookies Very Happy .

If you like soft cookies - not crispy, crunchy, or chewy - you can try what I did - I used my hamantaschen recipe. I made half this recipe and got somewhere around 30 cookies.

4 eggs
3 heaping tsp baking powder (I used a bit less - didn't want them too puffy)
1 cup sugar
1 cup oil
1/2 cup orange juice
pinch salt
4 1/2 - 5 heaping cups flour
2 tsp vanilla

Beat oil, eggs, sugar, salt till creamy.
Sift flour and baking powder together and add alternately with juice. If dough is very sticky, add flour slowly until it is just manageable - not too much or the cookies will be tough.
You can chill the dough at this point - if it is very sticky, chilling the dough will make it easier to handle.
Roll out dough on a well-floured surface and cut into desired shapes.

Bake at 350 for about 10 minutes - until slightly brown at the edges.

you can always substitute with palm oil if it needs the margerine however most recepes you can use oil.
1 stick = 1/2 cup

Don't have time to post it now, but there's a really good sugar cookie in Dining In that uses oil instead of margarine. Maybe someone can post it?

This is a great marg free sugar cookie recipe. We made dreidel cookies last week with it and then painted on the dreidel letters (or just plain painted if your 2).

Cookie dough:
Mix together with strong mixer (I used a 200 watt hand mixer and it was good enough):
3 eggs
1 cup sugar
3/4 cup oil
2 1/2 tsp vanilla
2 1/2 tsp baking powder
2 Tbsp Orang Juice
4 cups flour. (add more if too sticky, I normally end up using about 4 1/2 cups)

To paint cookies mix egg yolk with food coloring and use small paint brushes.

Bake at 350 for approx 8 - 9 minutes depending on the thickness of the cookies.

(This also makes a great marg free pie crust for apple pie)

Great dough!
Kneaded it by hand and it didn't crumble as much as lots of other oil recipes do (some marg ones too.)
Thanks for the recipe sky!
