I'm planning on using fondant for the first time this week to make my son's birthday cake.
I've heard that you are not supposed to refrigerate a cake covered in fondant. So what do you do with it? I doubt I'll have enough time to day of to decorate it.

Leave it out, well covered/wrapped. (You can put it in a cake dome and then wrap the dome in plastic wrap.)
If you're doing it up to 24 hours before you could even just leave it out. The reason for not refrigerating is the condensation when you remove it from the fridge.
