this recipe is from the purple spice and spirit (called banana bread) but I'm posting it with the changes that I made. It's heavenly and irrisistable.
2 c. flour
1 c. brown sugar
1 tspn baking pwder
1 tspn salt
1/2 tspn baking soda
2 eggs
a little less than 1/2 cup oil
2-3 bananas (mash 'em a little bit- just give it a squish)
1 cup oatmeal
bake on 350
I use a round 9 inch pan
Don't overbake or underbake so keep an eye on it. If you overbake it's a little dry but it's hard to go wrong with this cake.
ETA two ingredients I forgot to post!

My DH's favorite cake is banana cake and I've tried many recipes over the years. His favorite one (and I always get compliments on it) is from the original yellow Spice and Spirit cookbook.

Your thread inspired me to make my banana cake recipe diff then the ones posted. It came out great. I did it this time in cupcakes so neat for the kids. It was such a good idea b/c I had so many ripe bananas in my freezer and I forgot about this cake. Now we are 4 ban down 3 more to go. Thanks for helping me avoid doing Bal Tashchis.
My recipe is in the Nitra cookbook I can post it if you'd like it is quick easy and not crumbly.

I make the Hershey's banana 'bread'.
Ingredients
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup mashed ripe banana (2 to 3 medium)
1/2 cup shortening
2 eggs
1 cup HERSHEY'S Mini Chips Semi-Sweet Chocolate
1/2 cup chopped walnuts
Directions
1 Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan.
2 Combine all ingredients except small chocolate chips and walnuts in large bowl; blend well on medium speed of mixer. Stir in small chocolate chips and walnuts. Pour batter into prepared pan.
3 Bake 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. 1 loaf (18 servings)

Uh oh, just made this recipe and realize it doesn't say how long to bake.... Help please asap....

sorry just saw this now.hope your cake came out okay. I usually check after an hour by inserting a toothpick into center. As long as toothpick is not coming out with mush on it, then it's okay. If it's just a little cakey, it's okay it doesn't have to be perfectly clean.

Thanks for the recipe. I just made these as mini muffins in a metal wilton pan, done baking within 10 minutes.
They were yummy. I added a bit of cinnamon sugar and mini chocolate chips to the tops.
