How long and on what speed do you knead the dough, after all the ingredients are incorporated?

Like any mixer, when the dough stretches into nice strands. Don’t go too long.

I use a bosch. I mix e/t on #1 (2-3 min), and do about 12-15 min of kneading on #2. This week, I accidentally let my dough mix for about 20 min and it got a bit too sticky. Hope that helps!

I knead it on # 1 on a off for like a minute, and once the ingredients are more or less mixed together, I do #2 for 6-8 min. until the dough feels soft and smooth

I rarely require anything higher than speed 1. How long to knead depends on the type of flour, among other things. My whole wheat bread takes about 15 minutes, sometimes a little more. Every so often, take a piece of the dough and see if it will stretch to make a "window." That's when you're done.

Please excuse my ignorance, since I have a kitchen aid stand mixer (professional, 7 cup capacity). How big is the bosch ? Can it hold 5 lbs of flour for challah?

Yes. I use 6 lbs of flour and I think (not sure) it can hold up to 7 lbs.

Wow. Honestly it doesn't take me long to do by hand, but I'll look into it. Which bosch?

I was told to buy the metal bowl with the hook on the bottom
So I did
The bowl becomes hot
The dough get very sticky
Very hard to get out
I need to scoop it out in parts

I oil the bowl and hook before I start

Need tips on how to use Bosch with metal bowl

Someone told me NOT to use the metal bowl, only the standard plastic bowl
But
I’m afraid I’ll burn the motor, that’s what I was told.

I use speed #1 until ingredients mixed, then I do speed #2 for about 10 min. I was told to nvr use speed #3 as it can burn the engine.

It's the bosch universal plus mixer with extra stainless steel bowl. It holds a dough with up to 6 pounds of flour. I use 5 and it's comfortable. 6 is stuffed but very workable.

You do need the metal bowl for a heavy 5 pound dough. I'm not sure why the bowl gets hot, it should just be warm. Are you over mixing for the dough to become sticky?

The dough usually comes out cleanly without sticking. Washing is easy if done right away with warm water and soap so nothing hardens.

Ra mom, I guess hot is not the right word, very warm.
Maybe I’m over mixing
Maybe I’m not using enough flour
The dough never comes out cleanly

Can you give me instructions

This is what I usually do for 5 lbs of flour
Oil the bowl and hook
Proof the yeast in the machine bowl
Add wet ingredients
The start adding the flour
Mix for 3-4 min- until all the flour is well incorporated
Kneed for 15 min

My dough never balls up though

I do 6lb in the regular white bowl. It works.

I could REALLY use tips on how to clean it though! All the dough gets stuck in the tiny crevices..

I’m thinking about getting a mixer - up until now I just knead by hand or use a hand mixer with kneading hooks. What is the main advantage of using a mixer for challah? Is it just to save time or does the dough come out better?

I only use the stainless steel bowl. It becomes warm but that’s good. It helps the dough rise even nicer. Before taking out the dough I pour a drop of oil on the wall of bowl and turn the mixer on for 1-2 seconds to get the oil all around the bowl. That way the dough comes out beautifully.

My Bosch broke because I did six lbs and after a few years of such heavy work it just couldn't handle it. First a piece from he metal bowl broke off. My neighbor gave me hers since she didn't use it, but then my motor burnt out . It lasted about 8 years . After that I've only made challah by hand.
