Carolina Shredded Chicken
from Family Circle
Either bake or broil or use leftover chicken or turkey, about 2 lbs (I used soup chicken)
Sauce
1 T oil
1 small onion, diced
2/3 cup vinegar
1/2 cup ketchup
1/4 cup brown sugar
1 T mustard, spicy if possible
You sautee the onion and add the other ingredients and let simmer for about 5 minutes. Shred chicken with 2 forks or your gloved hands, then add to sauce. Eat in buns with slaw; mmmmmm
