1/2 cup red kidney beans
1/2 cup white navy beans
1 cup brown lentils
4 potatoes, peeled and chunked
1 large onion, chopped
3 cloves garlic, chopped
3 carrots, peeled and chunked
1 cup old fashioned oats (not quick cook or 1 minute type)
1/2 cup barley
3 Tbsp Kosher or coarse salt

Place the 3 types of beans in large pot. Cover with water. Bring to boil, covered, and cook 5 minutes. Turn heat off and let stand covered for 1 hour. Rinse and drain thoroughly.
Place beans in crockpot. Add potatoes, onion, garlicc and carrots. Add water to come to top of pot.
Cover and cook on HIGH for 1 hour. Uncover and add the oats and mix in. Pour in barley, pushing just below the surface, but not pushed all
the way to the bottom. If necessary add more water to come to the top.
Sprinkle with salt.
Cover and turn heat to LOW and cook overnight until ready to serve.

It's delicious! (Though I admit I have never put in the oats.)
You need a 6 qt crockpot for this.

Thanks so much! Really appreciate you ttyping that out. No oats in the house, so will leave them out. Also, I think I only have red lentils. Can I substitute these for the brown lentils? Or do you have another idea for a substitution?

Red lentils won't work here.
Use a different bean as a substitute. What do you have in the house? Cranberry beans work. Or you can just increase the amounts of the other 2 beans. Basically you need a combination of 2 cups worth of beans (equivalent to 1 16 oz. bag.)

Ok...I have cannelini beans, red kidney beans, haricot beans - any use? Shall I just use a mix of these?

Yes. I think haricot beans are small white navy beans. Just use a mix of those 3.
