Chocolate Orange Meringue Cookies
from a magazine; I never thought I could make them but they were actually really easy !!!!
Cookies:
2 egg whites
pinch EACH of cream of tarter and salt
1/2 cup sugar, divided
zest of one large orange - use a potato peeler if you don't have a microplaner
Filling/Topping:
1/3 cup chips or similar
2 tsp oil
Preheat oven to 250 and prepare 2 cookie sheets. In small bowl, beat egg whites until frothy and then add your salt and cream of tarter. When soft peaks form, add half the sugar and beat until shiny, then add the rest of the sugar and the zest. Spoon onto cookie sheets - you should have 15 on each sheet - and bake for 45 minutes or until crisp. Open oven door for about another 45 minutes about half an inch to allow cookies to cool and crisp. Alternatively, you can leave them in the oven overnight.
In very small saucepan, melt your oil and chocolate and use it to either make a sandwich cookie, or dip cookie partway into chocolate and allow to cool.
