It's easy to vary the sweetness and flavor depending on your mood and either way this cake always tastes delicious.
Servings: 9
Ingredients:
2 eggs
3/4 -1 cup sugar depending on if you prefer very sweet or less sweet.
1 tsp. vanilla
1/2 cup applesauce
2 Tbsp. water
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp cinnamon
3 apples peeled and sliced
1 more tsp. cinnamon
Directions
1. Preheat oven to 350 F
2. Beat together eggs, sugar, and vanilla until light in color.
3. Add applesauce and mix
4. Add water, flour, baking powder, and cinnamon and mix just until flour disappears.
5. In another bowl mix together the apples and cinnamon.
6. Spread a little less than half the batter in a greased 9" X 9"; pan. Spread apples evenly over batter. Top with remaining batter, and spread evenly. (If you wet the spatula the batter will easier to spread.
7. Bake at 350 for 45-55 min. Until golden brown. You can use partly whole wheat
flour and less sugar for a more wholesome cake that makes a great breakfast on Shabbos morning. Or use the full amount of sugar and white flour and you can even
add some brown sugar to the apples to make it really sweet and delicious. Then it'll taste like a professionally made store bought cake. This cake can be easily doubled and freezes well.

9"x 9" pan I can't find
What is a more available size for this recipe? 8" x 8"?
I tried to double it and put it in 9" x 13" but it didn't work.

You can use a 9" round pan.
