The choc chips are really what I want but there is over 3 cups of nuts- that much nuts- my kids wont eat them -

You Won't Believe They're Pesach Cookies
(from last year's Bina)
• 3-1/4 cups very finely ground blanched almonds
• 1 cup white sugar
• 1 cup brown sugar
• 2 eggs
• 1/2 cup oil
• 1/4 cup margarine at room temp OR 1/3 cup mashed banana; if using banana, use 3/4 cup less sugar
• 1/2 cup potato starch
• 1 cup chopped pecans
• 3/4 cup sweetened coconut flakes
• 1 cup chocolate chips

Preheat oven to 400.
Spread ground almonds on cookie sheet and toast for 2 minutes. Mix, and toast for another 2 minutes. Let cool.
Lower oven to 350.
In an electric mixer fitted with a beater, beat sugars, yolks, banana, and oil until creamy.
Add the cooled almonds and the potato starch and mix again.
Add the chopped pecans, coconut flakes, and chocolate chips and mix until combined.
Roll into 24 walnut sized balls and place onto a lined cookie sheet with 2 inches space between them.
Bake for 12 to 14 minutes. Cookies will be soft, but they harden slightly when they cool.

Did you ever make the CC cookies? Im leading towards that. Any baking time on the CC cookies? Are they cruchy/soft?
