The Country Captain (uses leftover chicken)
From Good Housekeeping
Makes 6 servings
Oil
2 cut up green onions
2 cup rice or similar, leftover is OK too
(3 cups water, if cooking rice)
4 cut up carrots
1 cut up onion
1 cut up pepper
2 cloves garlic, chopped
1 T ginger
1 T curry powder
1 tsp cumin
28 oz diced canned tomatoes
1/2 cup raisins
salt and pepper to taste
1 1/2 lbs chicken, leftover is OK too
1/2 cup nuts, toasted if possible
If you need to cook the rice, do so; with the rice and water.
In pan, heat oil and add onions, then add your carrots, pepper and garlic. Cook until tender, about 6 minutes. Add the ginger, curry, and cumin. Add tomatoes and raisin and pepper. Add your chicken.
If chicken is raw, let cook another half hour. If using leftovers, serve.
