anyone have a not too time intensive recipe for these starting off with ground meat? They are my husband's favorite food, but the kind you buy in the store are full of soy and all kinds of unhealthy chemicals. TIA

My husband likes the stuff that comes encased in plastic. I am basically looking to create a similar taste and texture without all of the unhealthy additives. I know that they made that stuff in the olden days, so there has to be a way to make it at home.

I am trying to keep the cost down and avoid paying any more than I would pay for the stuff at the store. (And maybe even pay less! Tongue Out )

you need the casing really. you can try and make long kebabs on sticks instead, maybe try mixing in a sasusge seasoning recipe like this: http://www.grouprecipes.com/89......html

You can make them without casings. Not as good, but possible. Wrap in plastic wrap, then refrigerate overnight or for 24 hours before cooking.

I modified the recipe shown here:

using extra lean ground beef to make sausage patties. I just omitted the salt because I think kosher meat is salty enough already. The kids liked them and they were a nice change. Next time I will try them with turkey.
