Chicken mandarin salad

1 chicken breast broken up

1 tbsp oil
1/4 tsp black pepper
1/4 tsp garlic powder
1/8 tsp onion powder
1 tsp kechup
1 tsp honey

Mix together smear over chicken breast pieces. broil 2-3 minutes (till fully cooked on bothy sides)
Cut into small pieces

1 head romaine heart sliced into thin strips
1 small purple onion chopped fine
1 can mandarin oranges drained
chunked chicken

Dressing (to be put on right before serving)
1/4 cup vinegar
1/4 cup canola oil
1T sugar
1T hot water

Melt sugar with hot water, add oil and vinegar mix well.

You can also used a mayo, vinegar water based dressing, I just don't use anything that isn't egg free in my cooking.

Spicy chicken salad

Prepare chicken same way as the other salad

! head romaine cut into thinish strips (in the with of the leaves)
1 cucumber cut in 1/2 length wise and then into thin semi circles
1 pepper chopped fine
1 red onion chopped fine
chicken chunks

Dressing

4 T spicy duck sauce (I use golds)
1.5 T oil (or 3 T Mayo)
2 T water

mix well pour over salad.

Steak salad.

I king of adapted this recipe from one a friend gave me from KBD (not sure which, cuz I dont have any of them)

1/2t black pepper
1 t paprika
1 t garlic powder

oil enough to make a paste.

Smear both sides of London broil with paste. Sear on both sides for about 10 minutes in a frying pan, then bake uncovered at 350 for about 1/2 an hour

! head romaine lettuce
1 red pepper cut into semi circles
1 cucumber diced
1 purple onion.
slice meat very thin, and add strips into salad

dressing

1/4 c oil
1/4 vinegar
1/4t black pepper
1/8 t oregano
1 bay leaf crumbled in
1/8t crushed red pepper
1/4 c fresh parsley

mix together and toss. ()you might want to go easy on the dressing at first. There will be enough meat for at least 2-3 salads.
